In a poultry dressing plant, same with the operation of slaughterhouse, several environmental issues are identified but the use of large quantities of water is the most prevalent concern of most poultry operators since this will also generate an equally large volume of wastewater with high pollutant loads. Three operations, evisceration, cleaning and washing are identified as the three processes that use almost 60% of all the water consumed in the whole operation. This section provides cost-effective measures to reduce the use of water but continually clean and wash effectively without compromising the food safety and hygiene standards. Some of the water conservation measures are simple housekeeping practices and equipment maintenance which can generate savings without an additional costs for the plant.
